What She Ate// Baker's Choice







Chai Tea Coconut Scones

I was almost dreading the approach of this week's 'What She Ate' theme. The tropical conditions that have overcome this wet little country have knocked us all for six. It's all we can do to peel ourselves away from the sun loungers outside these days and the dogs seem to have attached themselves to the cool porcelain of the mantelpiece in the living room, startled by the immense heat.

Just as the thought of baking anything was starting to become unbearable to me today, it happened... as if by magic, the sky darkened and the storm clouds rolled in. 
For me there is no better excuse  for hot, buttery scones and tea than a wet cozy afternoon stuck indoors.

I adapted this scone recipe from a vegan recipe I found online. My recipe isn't strictly vegan though as I had to tweak here and adjust there to make do with what we had in our kitchen cupboards. 
I also tossed in a few little 'extras' for added yumminess ^.^

Ingredients
(makes 9 scones)
~ 2 cups flour
~ 1 tsp baking powder
~ 1/2 cup butter
~ 1/2 tsp sea salt
~ 1/2 cup dessicated coconut
~ 1 cup chai tea (soak 2 chai teabags in boiling water, I used the Twinings variety)
~1 tbsp flaxseed
~1/4 cup maple syrup
~ 1/4 cup honey
~ 1/3 cup brown sugar
~ 1 tsp apple cider vinegar
~ 1tsp vanilla extract
~ ground walnuts
~ roughly chopped Lindt coconut chocolate
~ toffee yoghurt

method
~ Heat oven to 400 F/ 200 C
~ In a large bowl mix flour, coconut, salt and baking powder.
~ Add butter and mix with fingers until dry ingredients are coated.
~Brew tea in a measuring jug and add flax seed, brown sugar, maple syrup, honey, vinegar and vanilla.
~ Pour wet ingredients into large bowl and stir with spoon.
~ Fold in ground walnuts and chocolate, knead lightly and roll into a ball.
~ Place dough ball in fridge for 20 minutes.
~ Remove dough and roll out onto floured surface, using a cutter cut 9 scones and place them on a floured baking sheet.
~ Brush each scone lightly with a little toffee yoghurt to make a sweet glaze on them.
~ Place in oven and bake for 15 minutes.



I was tempted to serve these with a glass of chai tea but I reckon it is possible to have too much of a good thing so I opted for a mug of regular tea the size of my own head instead!

These turned out delicious despite the fact they are semi vegan and I am more used to my Mom's scones baked in the good old fashioned Irish-style with eggs and milk as well as butter. These had a very delicate chai tea flavouring but you could definitely make it out (I'd probably use 3-4 teabags next time though) and the maple syrup and brown sugar with the walnuts gave them an almost flapjack-like flavour.

What She Ate// By the Campfire


Here is my humble edition to Stacy from Let it Unravel's 'What She Ate' link up.
The theme this week was 'By the Campfire' and while I missed out on seeing the Rolling Stones at Glastonbury this year (boo) we have been having lots of barbeque weather here on the green emerald isle lately (yay).

So while I technically didn't cook this over a campfire, it was grilled and it is now your new favourite campfire/barbeque dessert.

Barbequed banana split stuffed with dark chocolate chunks, flaked almonds and coconut yoghurt.
The execution is the easy part, no method required here really, just barbeque the banana on each side for 5 - 10 minutes before splitting the skin and forking in the fillings.
Now, trying to capture a photograph of something like that which doesn't look like old turd was the real challenge in this scenario, haha!
{and one that I epically failed at, at that!}

But when you have sweet melted chocolate around your mouth and licking fingers still sticky with soft banana and coconut yoghurt you won't really care what the dish looks like.... because it tastes like heaven ^.^

RᐱW



Look at this array of rainbow foods~ ruby red tomatoes, perfect pink raspberries, vibrant green leafies and pop of yellow bananas. 
Food that shines and glows. 
Last week I finished a 7 day raw cleanse which left me shining and glowing from the inside out.
I loved every single bite, the abundance of energy and the feeling of lightness I was left with after the week was out and will definitely be cleansing like this once every few months ongoing.

The first 2~3 days of the cleanse were the toughest and I really was craving a hot meal or at least some grilled fish with my salads, I also hankered for my usual breakfast staples of oats or muesli.
However these cravings fell away surprisingly quickly and it was very interesting to realize how bloated I am by a lot of things I eat such as bread and pasta. I felt incredibly light and flat stomached by the end of the cleanse and I noticed a huge difference in the energy I brought to my work outs too.

None of this prevented me from rewarding myself with a huge bar of salted dark chocolate when the week was finished though ^.^

I signed up for the 30 day yoga challenge at Do You Yoga today. Can't wait to get started on it!

dark chocolate + avocado pudding







As promised here is a recipe that, I swear to you, you want to try!
Especially if you are one of those people (like myself) who love combining flavours...
I'm talking to the lovers of chocolate with sea salt and mixing peanut butter and banana in to your oatmeal. You need to try this pudding!

As usual, I discovered this dream blend of coconut milk, dark chocolate and avocados via Pinterest.
Do you pin? I'm semi-obsessed with it. Must be because I'm not working right now and have the time but these days I've been feeling a lot like this>>>

Anyway!
To the recipe ^.^

This recipe is not only delicious but also very good for you!
Dark chocolate is loaded with anti-oxidants and is good for your heart and brain while coconut milk is full of healthy fats that won't clog your arteries and avocados are a super-food with a wealth of health benefits, including being a great skin beautifier.

Bottom line is~ you can enjoy this smooth and creamy and deliciously chocolately pudding without having to feel 'the guilt' afterwards. AND, it's incredibly easy to make. All you need is 5 minutes and a blender.




Ingredients// 
~ 200 ml coconut milk
~ 4 ripe avocados {remove skins + stone}
~ 4 tbsp low fat cocoa powder
~ 4 tbsps honey, to sweeten
~ 1 large bar of good quality dark chocolate
~ 2 tsps vanilla extract
~ pinch of sea salt

Method//
Blend. Done.

clean eating inspiration

When I began this post it was purely going to be a recipe post for a delicious chocolate avocado pudding  and an update on my clean eating regime. However, as I thought about my current eating habits I realised how they tie in with the story of my last few months in South Korea and how I came to leave my job and move back in with my parents for some much needed recovery from the bashing my mind, body and metabolism had been though.

It's a tough story to recount, and even though I'm not 100% comfortable with baring my soul like this on-line, I think it will be a cathartic and healing practise for me to write it.
Perhaps some of you who read this will have had similar experiences.


I've been interested in superfoods, clean eating and nutrition in general for many years now. Throughout my twenties I have managed to maintain a constant low weight through a combination of diet and yoga.

And then last year happened. I started a new job at the beginning of my third year in Korea. The hours at my new school were crushing, the responsibilities and workload were threefold that of my previous school. At the end of every work day I was mentally and physically beat. I would stay up as late as I could every night, despite being exhausted, just to try and delay the moment when I would have to wake up and do it all over again.
 Needless to say my health and fitness habits became sloppy to say the least. Instead of using exercise to combat my work based stress I turned to all the quick fixes~ smoking, take-outs, boozy nights out after work. 
Before too long my health started to suffer, not only physically but mentally. It was around this time that my anxiety disorder became out of control, I couldn't visit a shopping mall or supermarket without having a panic episode. I decided, after 15 years of refusal, to seek pharmaceutical help for my stress and anxiety.

Two prescriptions later I was heavily medicated on anti-anxiety and anti-depressant meds, wired from my crazy work schedule, still drinking and eating unhealthily. 
9 months in to my contract I began to unravel.
My relationship suffered, my friendships suffered, I was suffering. I was burnt out, strung out on the medication, constantly sick with something and abusing alcohol to mask all the pain and disappointment I felt with myself.

When I put myself in hospital after one night of complete despair a big decision needed to be made.

And so here I am... back home, in therapy, off meds, working out and eating clean.
I'm back on track and ever, ever so thankful for the love and support of my family right now.

Now, more than ever, I realise the importance and quick-fire benefits of a good diet and active body.
When I stepped off that plane from Korea and entered Arrivals to meet my parents my Mom said she was shocked at my appearance; I was pale, thin, listless, the sparkle gone from my eyes. I had zero energy and would need to nap for a couple of hours if we did as little as go out to do some food shopping. I've never felt so zapped and depleted in my life.

But since I've got back on track and readjusted my lifestyle I feel one million times better.
I notice it in my hair, my skin, my energy levels, my mood.
Even my breathe, as gross as that is!
The fact is  (for those of you still with me!) my diet has been the cure-all remedy for all of the stress, anxiety and despair that I was going through.
It's always easier to reach for the cigarette or the slice of pizza, or to crack open a can to help you relax. But the truth is none of those things contribute towards your well-being. They will only contribute towards a second rate version of you, and who wants that?

I hope this post doesn't sound preachy. I just wanted to share my personal experience and journey.

clean, green diet


{spinach/tomato/mozzarella salad w/ pine nuts + mixed seeds}


{poached egg w/ granary toast, sliced tomato + avocado}

{wholewheat spaghetti w/ basil, cherry tomatoes, pesto + goats cheese}

{salad w/ spinach, sun-dried tomatoes, roasted bell pepper, avocado, pine nuts + goats cheese}

I'm pleased as punch that I have stuck to my clean eating regime since coming back home.
My plates are green, leafy and spring-colored with plenty of oily fish, fresh veggies and good fats.
I'm feeling the benefits of good nourishment, green smoothies, herbal teas and free range eggs.
I won't deny myself guilty pleasures~ I love bread and pasta for example, but I'll only eat wholegrain varieties. And the cheese is non-negotiable!

We've been having lots of April shower weather on this damp green island... slow moving days with half-shut curtains and open fires.
A girl could get used to spending every day in her pajamas!
& being surrounded by sleepy puppy-dog goodness ^.^

//strawberry, dark chocolate + brie grilled cheese//



Now that I've caught your attention with the title of this post I want to share this unbelievable sensory explosion of a sandwich with you!

I found the recipe here and knew at first glance that this was my kind of sandwich~ 3 of my most favorite ingredients melted between two slices of bread ^.^

The ingredients
~ 2 slices of bread (I used a fig + hazelnut loaf)
~ sliced brie
~ good quality dark chocolate
~ 4 quartered strawberries
~ sea salt
~ butter
~ olive oil


~ First, toss your strawberries with olive oil and sea salt in an oven dish and roast at 375 for 10 minutes.


~ Butter your sliced bread on both sides and coat one slice with brie and dark chocolate pieces.


~ Lay your slice of bread on a hot griddle and top with roasted strawberries

~ Place the second slice of bread on top to make your sandwich and grill for approximately two minutes on each side or until bread is golden and the filling has melted.



~ Take a minute to worship at the alter of this creamy, cheesy, strawberry-scented doorstop oozing melted chocolate goodness before taking your first bite. 
This is essential, because the sandwich will be devoured within the next ten seconds.

The best thing about this recipe is even though it's naughty it's still very very nice.
Dark chocolate (70% or higher) is packed with antioxidants and taken in moderation very good for you.
The most fattening part of this sandwich is the brie~ so this will definitely have to a naughty indulgence....but SO worth every bite!

Iced & Spiced~ Indian Chai Tea Latte


This is a love story.

It's about a girl travelling in India all alone, carrying her world on her back, adventure in her spirit... and leaving a little piece of her heart there when she returned home.
At first it wasn't an easy love. India didn't always seem to love her back. She could be harsh and crushing and cruel. Her streets swarmed, her heat suffocated, her people seemed broken and unsmiling. There were times when she took and she took and she took until the girl felt she had nothing more to give. 

 But then.

A time came when India began to give. She spoke to the girls soul and opened her arms up to her, showed her stars that were bigger than she'd ever seen before, purple skies, bustling bazzars and crumbling temples, eventual smiles from her people, not all broken but beautifully spiritual and inspiring.
It was in these moments the girl knew she had lost that small part of her heart there forever. 


The backdrop to this love story is tea.

 

 I cannot think of  India without my mind conjuring the heady and intoxicating scent of hot bubbling chai that infused every street corner, every train journey, every chai wallah's canteen. 
Sweet and spicy, lip-burningly hot and buffalo-milky. It came in plastic cups, small glasses, clay pots and china. 
Instead of footprints I left discarded tea vessels in my map across India.





My heart squealed when this pin showed me how to make my own authentic chai tea. 
All of the ingredients can be found right here in Korea's Homeplus and the cardamom in Itaewon's International food mart,

1. Honey
2. sugar
3. Cinnamon stick
4. Cardamom pods
5. Ginger
6. Black tea bag
7. Black peppercorns
8. Cloves

Go ahead and give yourself a special treat this week and follow this recipe.
One sip of this delicious infusion of sweets and spices and it will transport you to India by proxy.

Recipe box~ Chocolate Chip Coconut Banana Bread



So here is my basic little apartment kitchen.
 It's more of an after-thought than a kitchen really ... like the builders finished up the rest of  the apartment, were left with a small nook they didn't know what to do with so they inserted a few cabinets and a hot plate and voila! Here is your kitchen!
Sometimes when I bake in this bite size corner I feel like a Barbie doll using one of those kiddo role-play kitchens!
But I digress. Last night I put my toy oven, whoops, toaster oven to good baking use and baked the banana bread I've been promising myself for weeks.
It turned out pretty good for my first time-even if it was a little dumpy and crispy looking.
 It still had a sweet, gooey, coconut-y inside that went down a dream with an ice-cold glass of milk.

Something about baking up sweet things in an oven is good for the soul- even if it turns out looking lumpy-dumpy and not something Martha Stewart would produce. If they're made with love..who cares, right??
